Saskatoon Berry Recipes


Saskatoon Tarts
1 cup sugar
1 cup sour cream
3 tbsp flour
1 tbsp lemon juice

Heat ingredients until sugar dissolves. (Careful that it doesn't burn). Add 2 cups berries. Pour into pie shell or tart shells and bake at 350 deg. F. Bake tarts for 30 minutes.


Saskatoon Scones

3  cups flour
1 egg
1/3 cup canola oil
1 tbsp white sugar
1 1/2 tbsp baking powder
1 cup milk
1/2 cup saskatoons

Combine flour, sugar, and baking powder. In separate bowl mix together egg, oil and milk. Add wet ingredients to dry ingredients and mix well. Add saskatoons. Pat in circle on baking sheet and score into wedges. Bake at 350F for 15 minutes or until golden brown.

Lemon Saskatoon Loaf
1/2 cup shortening
1  cup white sugar
Grated rind of one lemon
2 eggs
1/2 cup milk
1 1/2 cup flour
1 tsp baking powder
pinch salt
1/2 cup saskatoons
Juice of one lemon
1/4 cup sugar

Cream shortening with first amount of sugar. Add eggs and mix well then add flour and lemon rind. Add flour, baking powder, salt and combine. Add saskatoons. Pour into prepared loaf pan and bake at 350F for 45 minutes or until toothpick inserted comes out clean. Mix lemon juice and 1/4 cup sugar. Pour over loaf once cooled.

Saskatoon Crisp (Brown Betty)
5 cups saskatoons
3/4 cup white sugar
Topping:
1 1/4 cup flour
3/4 cup packed brown sugar
1/2 cup butter or margarine
1/2 tsp salt

Fill 10 inch round casserole with berries about 3 inches deep. Pour sugar over top.
Topping: Mix flour, brown sugar, butter and salt until crumbly. Scatter over sugared berries and pat down slightly. Bake uncovered in 350F oven for about 40 minutes. Serve with ice cream.

Saskatoon Topping
This topping is perfect for ice cream, cheesecake, waffles and more
2 cups saskatoon berries
1 cup water
2 tbsp cornstarch
3/4 cup sugar
2 tbsp lemon juice

Place saskatoon berries in saucepan with water and bring to a boil. Simmer for 5 minutes. Blend cornstarch and sugar and slowly add to the berry mixture. Boil until clear and thickened. Add lemon juice and cool.
